About awamori

The history of awamori goes back more than 600 years.
In the early 15th century, the Ryukyu Kingdom traded heavily with China and Southeast Asia.
Awamori’s roots are thought to be in raon, a distilled spirit introduced through Siam (Thailand).

Later, our Ryukyu forebears established a unique Okinawan distillation technique.
In this way, awamori came to play an essential role in Okinawa’s international relations as a one-of-a- kind spirit.

In the 17th century, distillation by anyone other than families specially authorized by the Ryukyu government was prohibited.
Under highly strict control, awamori came to be prized as a gift to present to China and Japan.
This through attention to quality made Ryukyu’s awamori one of the world’s choicest spirits.

Okinawa’s only terroire distillery

The first batch consisted of only 60 1.8 liter bottles, or about 2% the production of our main distillery. Nearly all distilling processes are conducted by hand the old-fashioned way.
The rice is distilled in earthenware jigamakoshiki vats from the Ryukyu Kingdom era, baked in Chuko’s own kiln, for Okinawa’s only earthenware vat distillation process.
This new type of special distillery learns from the past to restore ancient production methods.
